For 6 ramekins:
- 50 cl of milk
- 2 g Agar-Agar
- 1 c.s sugar
- 1/2 c.c vanilla extract
- Caramel : 2 c.s sugar, 2 c.s water
1. Prepare the caramel in a pan.
2. Whisk in the milk.
3. Add sugar and vanilla extract.
4. Bring to the boil and whisk in Agar-Agar.
5. Fill the ramekin and refrigerate for at least 2 hours before serving.

For 4 ramekins:
- 100 g dark chocolate
- 2 c.s cocoa
- 2 egg whites
- 40 g sugar
- 12 cl milk
- 20 cl creme fraiche
- 2 g Agar-Agar
1. Melt the chocolate in a bain-marie.
2. Beat the egg whites, mixing in the sugar halfway through.
3. Mix in the milk with the Agar-Agar and boil for 30 seconds.
4. Heat the cream without boiling.
5. Add cocoa and chocolate to the Agar-Agar milk.
6. Add the cream and stir.
7. Allow the mix to cool slightly and add the egg whites, lifting gently for a fuller effect.
8.Pour into moulds and refrigerate.

- 2 or 3 pears
- 2 egg whites
- 20 cl creme fraiche
- 12 cl milk
- 2 g Agar-Agar
- 3 c.s sugar
1. Peel the pears, then mash with a fork or blender.
2. Warm up the cream and milk.
3. Dissolve Agar-Agar into the mixture.
Bring to the boil and allow to simmer for 30 seconds.
4. Beat the egg whites until stiff and add sugar.
5. Carefully add the pairs and the cream-milk mix.
7. Pour the mixture into jars. Allow to cool for several hours.

For 2 jars:
- 400 g strawberries
- 190 g sugar
- 1 c.s. water
- 2 g Agar-Agar
1. Wash and chop the strawberries into pieces.
2. Put in a large saucepan, add sugar, and mix.
3. Add the water and heat at low heat for about 25 minutes, stirring regularly.
4. Add in the Agar-Agar and boil for 2 minutes.
5. Pour the mixture into jam jars and eal the jam jars.
